2 tablespoons Mighty Fast olive oil
3 cups of your favorite veggies; peppers, asparagus, brussel sprouts, etc
1/4 cup vegetable or chicken broth
pink himalayan salt
fresh cracked black pepper
Preheat oven to 425-450 degrees Fahrenheit. After infusing olive oil in the Mighty Fast olive oil, set aside above amount to cool. Place veggies in a large glass dish. Drizzle olive oil over veggies and gently massage with your hands so that veggies are fully coated with olive oil. Pour broth into dish so that bottom is covered. Sprinkle salt, pepper and garlic powder over veggies. Place veggies into preheated oven and roast for 5-15 minutes depending on your stove or until veggies are slightly charred on top and fork tender. Remove from oven, allow to cool slghtly before serving.
