Mighty New Year Lentil Salad

2 cups cooked lentil beans

1/4 cup Mighty Fast olive oil

3 tablespoons white balsamic vinegar (apple cider or balsamic if available)

1 teaspoon dijon mustard

1/4 chopped red onion

2 tablespoons chopped walnuts

2 large carrots, diced

2 large celery stalks, diced

1/4 cup crumbled feta, parmesean or goat cheese

Himalayan pink salt, pepper, cayenne pepper to taste

2 tablespoons chopped fresh parsley (optional)

After infusing olive oil in The Mighty Fast Herbal Infuser, set aside 1/4 cup to cool.  Cook 2 cups of lentils or use already prepared lentils, rinse with cold water if canned and drain well. Place lentils in large bowl. Add in chopped onion, walnuts, carrot and celery. In a small bowl whisk together olive oil, vinegar, mustard until it becomes a smooth creamy mixture. Drizzle over lentil salad and mix well to coat. Add in cheese and parsley and mix well. Season with salt, pepper and a dash of cayenne to get the New Year started with a kick!
