Key Lime Pie Chia Pudding


1 1/4 cups Mighty Fast milk (use cashew, almond, coconut or dairy)

2 small organic lime, juiced and zested

2 tablespoons honey or agave

1/2 teaspoon vanilla

1/4 cup chia seeds
Bonus Crumb Topping:
*1-2 tablespoons Mighty Fast butter
*4-6 graham crackers


After infusing milk in the Mighty Fast Herbal Infuser, set aside above amount to cool. In a large bowl, mix together milk, lime juice and lime zest, agave, vanilla and chia seeds. Pour into a glass container and place in refrigerator for at least 2 hours or until chia seeds swell and mixture is thickened into pudding. To make bonus crumb topping, crush graham crackers and mix with melted Mighty Fast butter. Allow to cool and sprinkle on top of pudding. Serve topped with coconut whipped cream and crumb topping.
