Mighty Fast Vegan Chili

3 tablespoons Mighty Fast avocado oil
1/2 red onion, chopped
3 stalks celery, chopped
3 carrots, chopped
1 jalapeno, chopped
2 cloves garlic, chopped
1 can red or pinto beans, drained
1 cup tomato sauce
1 cup vegetable broth
1 bag chopped meat substitute
1/2 bag frozen corn
1 teaspoon cumin
1 tablespoon chili powder

After infusing avocado oil in the Mighty Fast Herbal Infuser, set aside above amount to cool. In a large pan over medium low heat, warm MF avocado oil. Add in onion and cook for 5-8 minutes or until it becomes translucent. Add in celery, carrot, jalapeno and garlic. Stir while veggies sweat approximately 5-8 minutes. Add in beans, sauce, broth, meat substitute and corn. Allow chili to simmer on low partially covered about 15 minutes or until fork tender. Add spices to taste. Serve with vegan cheese or hot sauce.
