Mighty Food of The Gods Chocolate Chip Cookies


½ cup Mighty Fast coconut oil, melted,  plus 2 tablespoons to lightly coat baking sheet

1 ½ cups all purpose flour or 1 cup almond meal plus ½ cup coconut flour or gluten free

2 tablespoons pure maple syrup

½ cup coconut or raw natural sugar

1 ½ teaspoons vanilla extract

1 large egg

1 teaspoon baking soda

½ cup dark chocolate chips

1 1/2 teaspoons sea salt (Pink Himalayan is the best)

After infusing coconut oil in The Mighty Fast Herbal Infuser, set aside above amount to cool. Preheat oven to 350°Fahrenheit. Mix flour, sugar, baking soda, dark chocolate chips and 1/2 teaspoon salt together in a medium sized bowl. Mix 1/2 cup melted coconut oil, maple syrup, vanilla extract, egg in another bowl. Mix wet into dry ingredients„ just until combined. Place cookie dough into refrigerator for 10 minutes. Lightly coat baking sheet with 2 tablespoons of coconut oil. Remove dough from refrigerator and drop by rounded teaspoon lightly pressing down to flatten cookie. Sprinkle remaining teaspoon of sea salt on tops of cookies. Bake for 8-10 minutes or until cookies are lightly browned around edges. Remove from oven and allow to cool on cookie rack.
