Mighty Honey Quinoa Granola


1/3 cup Mighty Fast honey

1/3 cup Mighty Fast coconut oil

2 cups uncooked quinoa

1/2 cup dried fruit (dried cranberries, cherries, apricots, dates, figs)

1/2 cup nuts and seed mix (cashews, almonds, walnuts)

1/4 cup hemp seeds

1 tablespoon chia seeds

1 tablespoon flax seeds

1 teaspoon vanilla extract

1 1/2 teaspoons cinnamon


After infusing coconut oil in The Mighty Fast Herbal Infuser, set aside above amount to cool. Spread quinoa onto a cookie sheet and bake at 350 degrees Fahrenheit for 30 minutes (or until golden brown), mixing every 10 minutes. Remove quinoa from oven and allow to cool. Once quinoa is cooled place into a large mixing bowl. Add in dried fruit, nuts and seeds and cinnamon. In another bowl mix liquid coconut oil, honey and vanilla extract until well combined. Pour wet into dry ingredients. Spread granola out onto a large cookie sheet. Bake at 350 degrees Fahrenheit for 10 minutes. Remove from oven and allow to cool. Eat granola plain, over yogurt or ice cream.
