Mighty Kale Quinoa Salad

2-4 tablespoons Mighty Fast infused avocado or olive oil
1 package organic kale pieces
1 cup quinoa
1 1/2 cups any summertime veggies; corn kernals, chopped zucchini, green peas or edamame
1 carrot, chopped
1/2 onion, chopped
1 can drained ready to eat beans (black, pinto or white)
optional: 1/4 cup almond slices, sunflower or pumpkin seeds
1/2 cup of your favorite dressing (sesame ginger is great with this)

After infusing avocado or olive oil in the Mighty Fast Herbal Infuser, set aside above amount to cool. Cook quinoa in either water or broth, according to directions on package. When quinoa is done, in a large pan, warm oil over medium low heat. Add in zucchini, onion and carrot and saute until fork tender, about 5-10 minutes. Add in remaining veggies including kale and mix well. Turn off heat and add in beans, quinoa and nuts if using. Transfer salad to a large bowl. Using tongs, slowly mix in salad dressing while gently tossing salad. Serve immediately and store leftovers in the fridge for up to a week.
