Mighty Minestrone

2-3 tablespoons (depending on personal preference) Mighty Fast infused avocado or olive oil
1/2 onion, chopped
2 cloves garlic, chopped
2 stalks celery, chopped
2 carrots, chopped
1 cup corn kernals
1/2-1 cup uncooked quinoa, rice or even leftover pasta
1 can any type of beans; pinto, white or garbanzo
2 boxes broth (vegetable or chicken)
1 1/2 cups your favorite marinara sauce

After infusing avocado oil in the Mighty Fast Herbal Infuser, set aside above amount to cool. In a large pot over medium heat, add oil till warm. Add in all chopped vegetables (except corn) and saute until tender, about 5-10 minutes. Add in quinoa, beans, broth, sauce and corn. Stir well and let simmer on medium low until quinoa is cooked through, about 20 minutes. Serve soup over a bed of spinach or arugula for added greens. Will keep in refrigerator up to a week.
