Mighty Peanut Butter Cookies

1/2 cup Mighty Fast coconut oil or Mighty Fast butter
1 cup peanut butter powder
1 egg or 1 chia seed egg (1 tablespoon chia seeds + 3 tablespoons water)
1/2 teaspoon vanilla extract
1/2 teaspoon sea salt
3 tablespoons flour

After infusing coconut oil in Mighty Fast Herbal Infuser, set aside above amount to cool. Preheat the oven to 350 degrees Fahrenheit. In a large bowl combine peanut butter powder and Mighty Fast infused coconut oil or butter. Stir until creamy. Mix in egg and vanilla. Stir in flour. Allow cookie batter to rest in refrigerator for 10 minutes. Scoop batter making tablespoon sized balls and place onto baking sheet topped with parchment paper or nonstick surface. Using a cold fork, gently press balls to flatten cookie slightly. Place in oven for 8-10 minutes or until edges are golden brown. Remove from oven. Cool on cooling rack before serving.
