Ingredients:

2 tablespoons Mighty Fast olive oil

2 large organic whole red tomatoes

2 large organic whole yellow tomatoes

1 jalapeño chopped with seeds removed

½ red onion, chopped into small pieces

Juice of ½ organic lime

1/4 cup fresh cilantro, chopped

1 teaspoon sea salt

1 teaspoon black pepper

Preparation:

After infusing olive oil in The Mighty Fast Herbal Infuser, set aside above amount to cool. Chop tomatoes, jalapeño and onion into small pieces and mix together in a medium sized bowl. Drizzle with fresh lime juice, olive oil and salt and pepper to taste. Allow salsa to sit at room temperature for about 30 minutes to allow juices to merge together before serving.
