Mighty Sweet Baked Bean Chili

3 tablespoons Mighty Fast olive oil
2 stalks celery
2 large carrots
2 cloves garlic
2 potatoes
2/3 cup corn kernals
2 cans baked beans
1 can pinto beans
2/3 cup tomato or marinara sauce
2/3 cup vegetable broth

After infusing olive oil in the Mighty Fast Herbal Infuser, set aside above amount to cool. In a large pot on medium low heat, warm olive oil. Add in chopped celery, carrot and garlic. Saute until tender about 10 minutes. Add in chopped potato and cook for 10 minutes. Add in baked beans and pinto beans including sauce from cans, mixing well. Add in tomato or marinara sauce and broth. Cook over medium low heat, stirring often about 30-45 minutes. Approximately 15 minutes before serving, add in corn kernals. Serve immediately over rice with corn bread, sour cream and guacamole or avocado slices.
